Super Simple Sunday Supper!

Tonight's menu is Chicken Burritos.
I'm starting off by making a pot of Goya yellow rice.
Then I'm sauteeing up a few chicken cutlets rubbed with chili powder, cumin and garlic powder. To the pan I am then adding a can of Goya Black Beans (undrained). Let that simmer for a few minutes to heat through.
Heat a few burrito size flour tortillas in the microwave to warm through. Lay out a burrito and line bottom of it with freshly shredded sharp cheddar cheese mixed with Monterey Jack. Add a layer of rice, then the chicken and beans. Dice some fresh red onion and tomato. Shred some lettuce if desired. ENJOY!! (If you don't have fresh onion or tomato, salsa or picante will do just fine too!)
